The quality of gluten to be extracted from flour
by washing is the most important factor of flour strength. Gluten washed by
had gives an incorrect figure. Due to uncontrolled variations, For eg. Factor
such as the amount of kneading of the dough the quantity and flow rate of water
used, such factors may affect the test result.
The automatic gluten washer is efficient and gives
very accurate results. No loss of gluten is seen as in hand washing. The gluten
washed is collected by a mechanical process.
CONSTRUCTION:
The gluten washer consists of a kneading chamber
with serrated walls and a perforated sheet at the bottom covered with Nylon
bolting cloth. Water is passed into the chamber through a water column to which
is attached through a water column to which is attached a flexible pipe which
is then attached to the tap.
The chamber has a rotor with four copper spring
arms. The rotor being driven through reduction gears by a constant speed electric
motor. A timer is fitted to control the duration of the washing period, and
switches off the motor automatically after completion.

OPERATION:
1. Weigh 25 gms of flour
2. Add approximately 15 ml of water to form dough.
3. Roll this dough on a plain surface to make a smooth ball.
4. Adjust the nylon bolting cloth, the rotor and the kneading chamber on the
machine and moisten it with water.
5. The ball is then kept in the kneading chamber between the two rotor arms.
Adjust the digital timer for 15 minutes, rate the flow of water and then switch
the motor on.
6. At the end of washing, the motor is switched off automatically and flow of
water is stopped.
7. Remove the kneading chamber and the rotor to collect the gluten from the
nylon cloth, which is then rinsed under a tap.
8. Gluten is then pressed as dry as possible.
9. This indicates the wet gluten.
10. Calculation: Percentage of wet gluten = 4 times weight of gluten
